Avocado Toast with Tomato

Avocado Toast with Tomato

I love avocados, and based on all of the visits and love I have received on this Avocado Chicken Salad post, you guys do too. I'm really glad we could find that common ground, I really see us having a future together.

This is a simple recipe that works for a healthy breakfast, lunch, a snack or even a light dinner. You could also leave the cheese off to make it even healthier. I had some pepper jack cheese on hand though and couldn't resist! I'm a sucker for cheese, especially if it adds some spice.

Here's the recipe for 1 toast, but I'm warning you know, you will most likely want to make more than 1!

Ingredients
1 piece of whole wheat toast
1/2 ripe avocado
2 slices tomato
1/4 teaspoon salt
2-3 slices pepper jack cheese (optional)

Directions
Preheat Broiler (if you're using cheese).
 

Toast bread (toast lightly if using cheese, toast all the way if going without cheese). Add avocado to stop of toast and spread, leave chunky or spread smoother based on your preferences. Layer on sliced tomatoes, sprinkle on salt. It's ready to devour if you're going without the cheese.

If using cheese layer cheese on top and broil for 3-5 minutes until cheese is melted. Be sure to keep an eye on it to avoid burning it, that would be sad. Enjoy!
