Sweet Potato, Onion & Avocado Quinoa Salad

I may have mentioned this before, but quinoa salads are a go to for me recently. Whether it's a hearty salad for dinner or serving one as a side dish, and they make perfect leftovers to bring for lunch.  It's a great way to load up on veggies.

Another bonus, quinoa salads are quick and easy to throw together. The quinoa takes about 20 minutes to cook up and while it's cooking you can chop and cook up the veggies or meat you want to throw into the salad.

The takeaway from this post...keep quinoa on hand so you can throw together an easy dinner, side dish or lunch.

1 cup quinoa
1 tablespoon olive oil
1 sweet potato, cut into large chunks
1/2 small sweet onion, chopped into large pieces
1 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon pepper
1 avocado, pitted and cut into pieces
1/3 to 1/2 cup barbecue sauce

Cook quinoa according to package directions.

While quinoa cooks, heat olive oil over medium high heat in stove top pan. Once oil is heated, add sweet potatoes and onion. Season with cayenne pepper, salt and pepper and stir around. Cook for about 15 to 20 minutes or until sweet potato is cooked through. Poke sweet potato with your fork to make sure it's cooked all the way...it should slide off easily.

Combine quinoa, sweet potato and onion. Stir and slightly mash in avocado and barbecue sauce.
