Snickers Cupcakes
Another dessert for you guys, this time it's in honor of Mr. KMW's birthday. If you remember from last year, he's a big Snickers fan so I went with a Snickers Ice Cream Pie. I had to mix it up this year and went with Snickers Cupcakes. Mr. KMW questioned me whether my motivation is truly for his birthday or if it's for my blog, especially when I shout, 'NO, YOU CAN'T TRY THOSE YET, I HAVEN'T TAKEN A PICTURE!'
All of the doubting went away as soon as he found the suprise in the middle.

That's right, I put a mini Snickers inside each one of those cupcakes. Surprise!
I used Amanda & Kevins Best Chocolate Cake recipe as a base, stuffed a mini Snickers inside, frosted it with caramel frosting and topped it with some more crumbled Snickers.
Let's just say that Mr. KMW was one happy birthday boy!

See below for the recipe, that makes about 18 cupcakes.
Ingredients
For the Cupcake
1 box devil's food cake mix
1 small package Jello instant chocolate pudding mix
1 cup sour cream
1 cup vegetable oil
4 eggs, beaten
1/2 cup milk
1 teaspoon vanilla
1-1/2 cups chocolate chips
18 mini Snickers bars (you'll need about 27 to 30 total)
For the Frosting
2 cups brown sugar
1/2 cup butter
1/2 cup milk
4 cups powdered sugar
9 to 12 mini Snickers
Directions
Line muffin/cupcake pan with liners and preheat oven to 350 degrees.
In a large bowl mix together all ingredients, except Snickers. Spoon or pour cupcake batter into cupcake pan. Stuff one mini Snickers in the each muffin, using a spatula to make sure Snickers is covered with cupcake batter.
Bake cupcakes for about 23 to 28 minutes (on the longer side to 5 minutes longer of what is on the back of the Devil's Food Cake box) or until cupcakes seem set. Unfortunately, the toothpick test doesn't work since there's a Snickers bar in the middle!
To make frosting, mix brown sugar, butter and milk in medium stove top pan over medium heat until butter melts. Once butter melts, increase heat to medium high and let boil for about 2 minutes. Remove from heat and stir in powdered sugar.
Crumble 9 to 12 mini Snickers in blender or food processor.
Frost cupcakes with frosting and top with crumbled Snickers.
