Spicy Tequila Lime Shrimp Tacos

I've been going wild with Avocado this past week, thanks to my shipment from California Avocados Direct! So this will just be one of several upcoming posts that involves this delicious fruit. Yes avocado is actually a fruit despite many of us thinking it's a vegetable, I just had to use Google to make sure I got that correct. Shrimp was on sale so I decided to go with some simple and light shrimp tacos and give them a little kick with hot sauce. Shrimp is great for a weeknight dinner because it cooks up so quick and it's packed full of protein. These tacos were extremely easy to make and had great flavors.

Plus, with the extra tequila you can make yourselves a margarita or a Mexican Martini! Please excuse my messy counter in that photo, it was in my early blogging days. The ipod you can see on the counter tells me I just came back from a run, nothing like a post run martini! Regardless of the mess, it tastes good and I apparently view it as a post workout recovery drink! Warning health and exercise experts may disagree on that.

Now that I've digressed, lets move onto the Spicy Tequila Lime Shrimp Taco recipe. Feel free to dress up the taco with salsa, cheese or sour cream. I was going the simple route.

1 pound of shrimp, peeled, deveined & tails removed
1/4 cup tequila
1/4 cup lime juice
2 tablespoons Cholula hot sauce, adjust for spice preference (you can you Tabasco if you prefer)
2 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1/2 onion, sliced
1 tomato, diced
1-2 avocados, diced
taco shells
shredded cheddar cheese (optional)
salsa (optional)


Mix together tequila, lime, hot sauce, garlic, salt, pepper and olive oil to make shrimp marinade. Marinate shrimp in tequila mixture for about 30 minutes.

Preheat grill pan to medium high heat (you can of course use a real grill, but just place the shrimp on skewers if you do). Once pre-heated place shrimp and onions on grill pan, pouring some of the marinade over the onions and shrimp. Cook shrimp until opaque and cooked through, rotating once. It should be about 7 minutes. Remove shrimp from grill pan and let shrimp cook a few more minutes.

Assemble tacos with shrimp, tomatoes, avocados, onions and a little more hot sauce if you want more heat. Garnish with shredded cheese and salsa if desired. Enjoy!
