Arroz Caldo with Chicken

Chicken Arroz Caldo

I've been excited to share this soup recipe from my mother-in-law with you guys, I was just waiting for one of us to get sick, because it's guaranteed this soup will make us feel so much better. Because of that I call it my Magic Soup! Mr. KMW was the one who took the bullet for you guys and got sick just so I could share it with you all. So send him your thanks!

Arroz Caldo is a Filipino soup with chicken broth and rice. Although I'm pretty sure the ginger is the secret and that's what makes it magical. Next time someone in your house is under the weather make them this! Or you can just make it if your in the mood for some really tasty chicken soup. 

I'm going to give this a try in the slow cooker next time, I'll let you know how it goes.

Ingredients
1 tablespoon olive oil
1 package bone in chicken legs or thighs (approx. 1.25 lbs)
1 cup rice, uncooked
1-1/2-2 inch long ginger, sliced thinly
3 cloves garlic, minced
1 medium onion, diced
1/2 teaspoon salt
1/2-1 bouillon cube, divided
1-1/2 teaspoons ground pepper
scallions, chopped
4 cups water

Directions
Heat oil in large stove top pan over medium high heat. Add ginger and saute for about 1 minute. Add garlic and onions, cook for about 5 more minutes.

Reduce heat to medium and add chicken, salt and half of bouillon cube, stir together and cover pot. Cook for about 10 minutes until chicken is browned, turning chicken occasionally. 

Add water to pot, cover and bring to boil. Once boiling, reduce heat to medium low and cook for 25 minutes, stirring occasionally. 

After 25 minutes, add rice and 1/4 more bouillon cube and pepper, mix together. Cover and cook for 20 more minutes. Taste to see if more salt, pepper or more bouillon is needed and add if desired. If rice is not ready or broth is too thick for your preference add a little more water. Chicken should be falling off the bone when it's ready.

Serve in bowl topped with scallions and feel better soon!
