Bret's BBQ Baby Back Ribs

Whenever we visit my brother and his wife in Virginia, two things are guaranteed, good meat and moonshine. So when we had a wings & ribs night on vacation, I knew my brother's ribs would not disappoint. The ribs were falling off the bone and you could taste the love he put into them; they were marinated overnight, braised in beer, and then smoked over wood chips. Below is a picture of them, post marination and pre-braising.

And before I give you the recipe, I'll leave you with a couple of pictures of my niece enjoying our delicious dinner,she's a great eater and a girl after my own heart.

 

 

 


Recipe
Ingredients - Adjust amounts to how much you would like to cook and to your tastes
2 racks baby back ribs
1-2 beers
BBQ Sauce - My brother uses this recipe and it was glorious, don't get intimidated by the ingredient list
apple wood chips, soaked


For the Dry Rub
paprika
brown sugar
garlic powder
salt
pepper

 

Directions
Peel the membrane from the back side of the ribs, then coat in dry rub and marinate overnight.

Preheat oven to 325 and braise ribs for 2 hours. Meanwhile cook barbecue sauce, reducing it to make it thicker.

Smoke ribs over soaked (make sure you soak for at least an hour and shake off water before tossing them into fire) wood chips for an hour or until desired tenderness. Midway through cooking coat ribs with BBQ sauce, occasionally brush more on to suit your taste.
