I'm back! We just got back from spending a wonderful few days with my brother, sister-in-law and nephews in California and then flew home to New Jersey to celebrate Christmas with our parents. I hope you had a Merry Christmas and enjoyed some good times with your friends and family. Are you ready to ring in the New Year? Butternut Squash, Black Bean & Spinach Burritos I made an effort to start making meatless meals this year and these burritos were a big hit at our house (apartment)!
