Slow Cooker Butternut Squash, Chicken and Bean Chili


Remember when my husband confessed his love for squash? Well you've probably noticed that I took his words to heart and have been making a lot of squash since.

So when I was at a wedding a couple of weekends ago and someone mentioned they made a really good butternut squash chili in the slow cooker my ears perked. It led to me throwing some butternut squash and a handful of other random ingredients into the slow cooker Tuesday morning and coming home to a delicious dinner. I wasn't sure whether I should consider it a chili or a stew, but I'm going with chili, regardless it's REALLY good. It's in the slow cooker so it's easy and with most of my slow cooker recipes, it's even better leftover!

Remember, don't be intimidated by cutting up the butternut squash, this video that I shared in my Butternut Squash, Black Bean and Spinach Burrito post makes it easy.

1 butternut squash, cut into 1 to 1-1/2 inch pieces
1 red pepper, chopped
1 green pepper, chopped
1 onion, chopped (reserve some for serving if desired)
1 package chicken or turkey breasts (approx 1-1/2 lbs)
1 can black beans, drained
1 can pinto beans, drained
1 can corn, drained
1 28 oz can diced tomatoes with green chiles
3 garlic cloves, crushed
2 tablespoons chili powder
1 tablespoons cayenne pepper
2 teaspoons cumin
1-2 teaspoons dried oregano
1-2 cups low sodium chicken broth

To Garnish
raw onions
shredded cheese
sour cream 

Place all ingredients in slow cooker, stir/mix together and cook on low for 7-8 hours. Once cooked shred chicken and mash up the butternut squash with potato masher or back of spoon. I use my potato masher to shred chicken in the slow cooker and it makes it really easy. Taste chili and season with any additional spices that are needed.

Garnish with desired toppings (we just used raw onions) and enjoy!

I wish my husband would confess a love for squash. When that day comes, look out! I'm going to make nothing BUT recipes with squash! This looks wonderful!

Have faith! My husband is the last person I ever thought would love squash, the conversion started with a butternut squash soup. Although he still gets disappointed when I make spaghetti squash, he'll never learn that I'm not making actual spaghetti.

I so wish I had all of the ingredients for this. The combination sounds so good and my husband does love squash. This is a great meal!
