Butternut Squash Pasta Bake

Butternut Squash Baked Pasta

"THIS IS THE BEST PASTA YOU HAVE EVER MADE ME!" - Mr. KMW

If you guys haven't checked out How Sweet It Is you should, she always has amazing food popping up on her blog that I just have to try. When I saw her Butternut Squash Baked Penne I knew I had to try it very soon, lucky for me I had some pre cut butternut squash in my fridge. That's what I call fate.

I made a few changes, mixed up the spices, used a different type of pasta added some chicken and it was fantastic. To be honest I only added the chicken because I thawed it for lunch but never got around to actually making lunch.

This was so good! I already want to make it again, even though we just finished up the leftovers.

Butternut Squash Pasta Bake

Butternut Squash Pasta Bake adapted from How Sweet It Is

Ingredients
1 pound butternut squash, peeled and cubed
2 teaspoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1-2 tablespoons butter
2 small shallots, chopped
1 tablespoon flour
1/3 cup mascarpone
1 cup milk
2 grilled chicken cutlets, sliced
1/2-3/4 pounds whole wheat farfalle
1/4 cup fresh mozzarella, shredded
1/4 cup grated parmesan cheese
sage leaves
crumbled bacon, optional

Directions
Preheat oven to 400 degrees.

Toss squash with olive oil, salt, pepper, cayenne and garlic powder on baking sheet. Cook for 35-40 minutes (tossing around on sheet midway through), until squash is tender. Place squash in bowl and mash, set aside.

Cook pasta according to package directions.

Meanwhile, heat stovetop pan over medium high heat and add butter and shallots, whisking continually for about 2 minutes until butter browns. Whisk in flour and cook for 1-2 minutes. Stir in milk, mascarpone and mashed squash until well combined. Stir in sliced grilled chicken. Season with more salt and pepper if needed. 

Add pasta to baking dish, pour butternut squash sauce over pasta, top with cheeses and sage leaves.

Bake for 25 to 30 minutes, until cheese is bubbling. This is when you try not to dive head first in to the oven to devour this pasta, try to wait patiently. Garnish with bacon (optional) and enjoy!
