The ingredients must have come to me in my sleep. The more I use my slow cooker, the more I love it.

This salmon is so delicious on it's own. I decided to cedar plank the salmon on the grill, and drizzle it with some cayenne lime butter.

After having a bite of the Chipotle Chicken Tacos my coworker brought for lunch a couple of weeks ago, this was my dinner two days later.

If you know me you know I am a sucker for avocado and chipotle. I used a rotisserie chicken so it's super easy to make.

Egg, Prosciutto & Tomato Muffins
Sriracha Meatballs

I'm a big fan of savory muffins. These are pretty much mini omelettes in a cup. They are perfect for weekend brunch, and even better to make ahead for the week and then pop them in the microwave.

Queso Closed: Eating Our Way Through Austin

We visited Austin this past weekend and I was in food heaven, indulging in two of my favorites, Barbecue and Mexican. Thanks to our wonderful hosts, I have some pretty good recommendations if you're ever visiting Austin. Which you should, just so you can eat black beans and queso for breakfast without being judged.

We arrived Friday night and our first stop was Stubbs for some Texas Barb-B-Q and cold beer. It was a great atmosphere and delicious food.

We started off with some queso and fried green tomatoes for appetizers (yum) and the highlights of my dinner were the chopped beef and the serrano cheese spinach. I will be attempting to re-create this spinach sometime in the near future, look at it, it's heaven on my plate.

Just look at this happy patron.

Oh and if you go to Stubbs, try to wear a red plaid shirt.

Now onto brunch, we went to Magnolia Cafe on Saturday and there were so many breakfast options that included black beans I couldn't handle it.

After a lot of debate between Huevos Rancheros, Breakfast Tacos and Migas I went with the Migas and never looked back. Migas are scrambled eggs mixed with tortilla strips, tomatoes, onion, peppers and cheese.

Everyones breakfast looked tasty, I really don't think you can go wrong. Be prepared for a wait when you head to Magnolia's for brunch, it's well worth it.

In between Magnolia's and another glorious brunch we went to watch Kansas (my team) play Texas in football.

I don't even know why I'm sharing this with you, it was an awful game for Kansas, record setting lows awful. So let's move on to better things, like Chik-fil-a.

Pat was in a bad place before this trip, he had never had Chick-fil-a, devastating right? So we fixed that and all of you lucky KMW readers get to witness his first bite!

Okay, it was the moments before the bite, but just look at that anticipation, his life was about to change. Always remember that Chick-fil-a is closed on Sundays, I've forgotten and it has led to some serious disappointment in my life.

You're not going to believe what I had for breakfast Sunday at Maudie's, breakfast enchiladas and queso. Let me repeat myself, I had enchiladas AND queso for breakfast. The picture says it all.

We had a fun weekend in Austin with good company and good food. When you go to Austin and try out all of these awesome food stops along with some tacos from a truck, you may just be as happy as this crew.

Needless to say, I'll be doing a lot of running this week. Queso Closed.
