My coworkers get all of the credit for the inspiration of the Dorito crunch in this chicken salad. I'm now a couple of months into my new job, and I've never heard a group of people talk about the Taco Bell Dorito Taco so much, honestly...I'd never even heard of it before. It sounds like an excellent idea, but the consensus around my office is that it's definitely not worth driving 900 miles to eat this taco.

Guacamole Pasta

I've been a bit sporadic with my posts lately, we've been having fun (and eating well) with visitors from the East Coast.

A good friend was here last weekend, and my parents the past few days...they have been spoiling us with some delicious dinners out. Last Friday we haddinner at Ray's Boathouse, where we enjoyed some of the first Copper River Salmon that arrived in Seattle. Copper River Salmon is a big deal around here...it literally gets red carpet treatment when it gets off the plane from Alaska.

Remember when I told you about my new obsession with lavash flatbread?

Well this was a pretty darn tasty result of that, especially if you are an enchilada fan like myself. And don't get confused with me getting all fancy and using the term deconstructed (don't you see that on the menu at all of the hip restaurants), this is super easy to make.

Smoked Salmon Salad with Brown Butter Vinaigrette

Now that I live in Seattle, I've become pretty tight with Smoked Salmon. Our relationship just started a couple of weeks ago, but it's off to a fantastic start. It's something easy to pick up at the market and keep in the freezer until it is needed. And if you're not into the freezer or refrigerator, the guy at the market told me it would last four days out of the fridge. I think I'll have to bring some with us the next time we go camping!

This salad is just the beginning, coming to KMW soon will be a tasty breakfast with Smoked Salmon and Smoked Salmon and Quinoa Patties. As I said, this is just the beginning of what I see to be a strong relationship...so I hope you're a fan!

Can we also talk about the Brown Butter Vinaigrette? If you haven't already heard, you can never, ever go wrong when it comes to Brown Butter. The dressing almost didn't make it onto the salad, because I was tempted to just drink it straight out of the pot I made it in.

One of my favorite things about being a food blogger, is that all of my family and friends started sending me their favorite recipes or fun ones that they see elsewhere. This is a result of that, thank you Kristen! And you guys should thank her too, because now you have an awesome brunch option for this weekend.

If you are a fan of Egg in the Hole and onions, you're going to love this recipe! Donna and Anne over at Apron Strings cracked an egg in an onion! Really smart move on their part. 

I made a quick attempt at breading the onion instead of straight up sauteing like they did. A sauteed onion would be tasty too, but I definitely liked the extra crunch the panko added. When you're reading the recipe directions, the quick breading may seem like a pain in the butt to do in the morning, but it's really not, I encourage you to take the extra steps to give some crunch to your brunch! I deserve to be made fun of for that line...go ahead.
